🥐 Vanilla rolls (traditional Christmas cookies)
📝 Ingredients:
Shortcrust pastry:
500 g plain special flour
140 g powdered sugar
200 g finely ground walnuts
200 g animal butter (min. 82% fat)
200 g vegetable fat for baking (75–80% fat)
Crumb:
2 heaping tablespoons of powdered sugar
24 g vanilla sugar
👩🍳 Procedure:
1️⃣ Preparing the dough
Place the flour, icing sugar and ground nuts in a large bowl.
Add the butter and vegetable fat, cut into pieces.
Quickly knead into a smooth, crumbly dough.
Wrap the dough in foil and let it rest in the refrigerator for at least 1 hour (ideally overnight).
2️⃣ Shaping rolls
Cut small pieces from the dough, roll them into thin cylinders and shape them into small rolls (crescents).
Place them on a baking sheet lined with baking paper.
3️⃣ Baking
Bake in a preheated oven at 170°C for approximately 10–12 minutes, until they remain light (they must not brown).
4️⃣ Packaging
Carefully roll the still warm rolls in a mixture of powdered sugar and vanilla sugar.
🍽️ Tips:
The rolls are best after a few days of aging.
Store in a sealable container.
