INGREDIENTS:

7 egg whites
200 g sugar
200 g grated coconut
100 g semi-coarse flour
Cream:
7 egg yolks
120 g sugar
3 tablespoons cocoa
250 g butter
Chocolate icing:
100 g chocolate
30 g butter
50 ml cream
Procedure:

Dough:

Beat 7 egg whites until stiff, while stirring constantly, gradually add sugar and beat until glossy, then carefully add grated coconut in parts and finally sifted flour. Line a baking sheet with baking paper, spread the dough evenly on the sheet and level it. Bake in a preheated oven at 180 ° C for about 12 minutes, until nicely pink. Let the body cool completely. Cream:

Mix the egg yolks, sugar and cocoa in a water bath until foamy, making sure that they reach a temperature of at least 62°C for about 4-5 minutes to pasteurize them. Be careful not to heat the mixture to a temperature higher than 65°C. Transfer the cream to a blender and mix constantly until it cools to room temperature. Then add the softened butter in parts, beat well.

Spread the cream evenly over the cooled cake base and place in the refrigerator to cool and harden.

Frosting:

Carefully heat the chocolate, cream and butter in a water bath, stirring constantly, until everything is melted, then whisk until smooth.

Spread the icing evenly over the cooled cake. Refrigerate the cake for an hour until the chocolate has set.
