
Spaghetti Aglio, Olio e Peperoncino
Heat the olive oil in a large skillet over medium heat.
Add the garlic and red pepper (sliced or crumbled, depending on which you’re using).
Sauté the garlic gently for 1–2 minutes, or until golden brown. Be careful not to burn it, as this will make the dish bitter.
- Add the pasta:
Drain the spaghetti, reserving 1 cup of the cooking water.
Add the spaghetti to the pan with the garlic and pepper.
Toss well and add a splash of the cooking water to help the sauce adhere. - Finishing:
Give the pasta a good stir to incorporate the flavors.
Add fresh parsley for extra freshness, if desired.
Season with salt and drizzle with a little extra olive oil, if desired. - Serving:
