🥥 Coconut slices.
Ingredients:
Body:
6 egg whites
180 g granulated sugar
150 g finely ground coconut
100 g plain flour
½ packet of baking powder
Cream:
300 ml milk
80 g sugar
6 egg yolks
40 g cornstarch (Gustin) or 1 vanilla-flavoured pudding
150 g butter
Chocolate icing:
150 g cooking chocolate
4 tablespoons oil
For sprinkling:
Grated coconut to taste
Procedure:
1. Preparing the dough.
Beat the egg whites until foamy, gradually add the sugar and beat until stiff peaks form. Gently fold in the coconut, flour and baking powder.
Pour the dough into a baking sheet (approximately 42 × 30 cm) lined with baking paper.
Bake in an oven preheated to 180°C for approximately 15–20 minutes, until the crust is lightly browned.
After baking, let it cool and cut it into two equal parts (if you want, you can also bake two smaller sheets separately).
2. Cream.
From 300 ml of milk, set aside about 100 ml.
In this smaller amount, mix the egg yolks, sugar, and cornstarch (or pudding mix).
Bring 200 ml of milk to the boil, pour in the egg yolk mixture and cook, stirring constantly, until the cream thickens. Set aside and let cool completely.
Beat the butter and gradually add the cooled cream to it. This will create a soft, smooth yellow filling.
3. Chocolate layer.
Melt the chocolate and oil over a double boiler or in the microwave. Mix well until smooth.
4. Assembling the cake.
Pour chocolate icing over both baked sheets and let it harden.
Spread half of the yellow cream on the first sheet of chocolate frosting. Place the second sheet on top, with the chocolate layer on top of the cream. Spread the other half of the cream on top and smooth. Sprinkle with grated coconut.
5. Completion
Let the cake rest overnight in the refrigerator to allow the flavors to meld and the cake to set.
Cut into slices the next day.
💡 Tip: Coconut cakes can sometimes be more difficult to cut. If you want nice, straight cuts, put the cake in the freezer for about 30 minutes before cutting – it will be much easier and the cuts will be smooth.
Result.
The cake is soft, creamy, fragrant and perfect for a holiday table. The cream is exceptionally tasty and one of the best for coconut desserts.
